Banana Bread Recipe (Because It's Quarantine)

Happy Monday!  I hope that you are safe and healthy, wherever you may be.  

Today, I am sharing the banana bread recipe that I have been making on repeat while I am quarantined at home. If you go on Instagram, this seems to be the obligatory thing to make during quarantine, right? I am on my third loaf (this is week 6 of quarantine), so I thought I would share this recipe not only because is it super easy to make, but it turns out delicious every time. Enjoy!

Ingredients
1 cup granulated sugar
1 stick butter (8 tablespoons), softened
3 ripe bananas (the riper, the better)
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
Dash vanilla extract
1/4 cup semi-sweet chocolate chips
1/4 cup chopped walnuts (or walnut pieces)

Directions
1. Spray 9 x 5 x 3 inch loaf pan with coconut oil (or you can butter the pan).
2. Cream sugar and butter in a bowl until fluffy.
3. Add eggs one at a time, beating well. Add a dash of vanilla extract on top of each egg before beating.
4. In another bowl, mash the bananas and add the milk and cinnamon.
5. Add the banana mash mixture to the creamed mixture and hand mix until combined.
6. Add the dry ingredients (flour, baking powder, baking soda, salt) on top of the wet ingredients and hand-mix until combined.
7. Add in chocolate chips and walnuts, and combine again by hand.
8. Pour batter into pan and bake at 325 degrees F for 1 hour and 10 minutes.
9. Enjoy warm with a scoop of vanilla ice cream!
